Freeways in Texas typically have 3 lanes with the right-hand lane for slower moving traffic like heavy trucks, old cars, slow drivers, etc. You should be fine staying in the right lane cause people are used to slower moving traffic there. They just go around you. The problem it seems to me is more likely to be one lane roads each way with little to no shoulder and a speed limit of 60-70 mph. We have several of those in Texas too. Also remember almost all interstates near cities have access roads that parallel them, so you could take that road. If all else fails, Google maps has bicycle routes. You can get anywhere on a Grom. I will ride it on I-35 at 60 mph in the right lane...been doing it for years in my cars.
